π§ INGREDIENTS:
225 g (1 cup) Fair Cape Salted Butter, softened
100 g (1/2 cup) granulated sugar
250 g (2 cups) all-purpose flour
π₯£ METHOD:
1. Preheat the oven to 175Β°C and line a baking sheet with parchment paper.
2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. This process takes about 2β3 minutes.
3. Gradually add the flour, mixing until the dough comes together. The dough should be soft and slightly sticky.
4. Roll the dough into 2 cm balls and place them on the prepared baking sheet.
5. Flatten each ball with the back of a fork to create a crisscross pattern.
6. Bake for 12β15 minutes, or until the edges are lightly golden.
7. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Made with Fair Cape Cream and Ecofresh Milk, π₯ this cosy twist on the classic is perfect for festive get-togethers and warm December nights. β¨ Hit save and whip up something special this Christmas! π
π₯ INGREDIENTS:
6 large egg yolks
125ml (1/2 cup) granulated sugar
250ml (1 cup) Fair Cape Cream
500ml (2 cups) Fair Cape Ecofresh Milk
2.5ml (1/2 tsp) ground nutmeg
1ml (1/4 tsp) vanilla extract
pinch of salt
Ground cinnamon, for topping
π§βπ³ METHOD:
1. Whisk the egg yolks and sugar together in a medium bowl until light and creamy.
2. In a saucepan over medium-high heat, combine the cream, milk, nutmeg and salt. Stir often until mixture reaches a bare simmer.
3. Add a big spoonful of the hot milk to the egg mixture, whisking vigorously.
4. Repeat, adding a big spoonful at a time, to temper the eggs.
5. Once most of the hot milk has been added to the eggs, pour the mixture back into the saucepan on the stove.
6. Whisk constantly for a minute or so, until the mixture is just slightly thickened (or until it reaches about 70Β°C on a thermometer).
7. Remove from heat and stir in the vanilla.
8. Pour the eggnog through a fine mesh strainer into a pitcher or other container and cover with plastic wrap.
9. Refrigerate until chilled; it will thicken as it cools.
10. If you want a thinner, completely smooth consistency, you can add the entire mixture to a blender with 1 or 2 Tbsp of milk and blend until smooth.
11. Serve with a sprinkle of cinnamon or nutmeg, and fresh whipped cream, if desired.
12. Store homemade eggnog in the fridge for up to one week.

It's IMPOSSIBLE to rely on Fair Cape milk to last to the "Best Before date" ... Time and time again, I land up with milk that's gone off DAYS before it supposed to expire!!! So sick of this, emailed them numerous times, and all they care about is the image and brand, NOT about the actual consumer! It's a waste of time emailing them!!!
